Maybe your football team tanked last weekend. Maybe you were sick…on your birthday. Maybe someone you love had surgery. Or, maybe all those things happened to you in one day (true story)! We all have that go-to food that just makes us feel better from the inside out. And nothing does the trick better than Mrs. Dunavant’s Chicken Florentine casserole…aka Feel Good Florentine.
Dog ear this one as a keeper. It’s quick, delicious, can feed a crowd and is an automatic spirit lifter. P.S. Crispy corn flakes don the top. Honestly, what could possibly be better?

Feel Good Florentine
- 1 package chicken tenderloins
- salt and pepper to taste
- 1/2 stick butter
- 2 tbsp EVOO
- 2 10 oz packages frozen chopped spinach
- 1/2 cup mayonnaise
- 1 can cream of chicken soup
- 1 tsp freshly squeezed lemon juice
- 1/2 tsp curry powder
- 1 cup shredded sharp cheddar cheese
- 1/2-1 cup corn flakes
Saute chicken in butter and oil over medium heat for 10 minutes.
Cook spinach according to instructions. Drain and squeeze out excess water.
Spread spinach at the bottom of a 9x13 casserole dish.
Layer chicken on top of spinach.
Mix together mayonnaise, chicken soup, lemon juice, and curry powder. Spread evenly over chicken.
Sprinkle with cheese.
Sprinkle with corn flakes.
Bake at 350 for 25 minutes.
